Gourmet Nacheez Spread

This recipe uses the flavor of Nacheez to produce a sweet cheez spread that can be used on crackers, bread, bagels, sandwiches, etc.
  • 1 jar Nacheez
  • 12 ounces Macadamia Nuts
  • 1/2 tsp liquid smoke flavoring
  • 1 cup loose packed raw Agar agar strips
  • 1 cup vegetable broth
  • spices or flavorings to taste (optional)
  1. Place macadamia nuts in food processor and process until smooth.
  2. Add Nacheez and smoke flavoring and continue processing until thoroughly mixed and smooth.
  3. In a medium sized sauce pan heat vegetable broth to a boil and add agar stir until agar is fully dissolved.
  4. Scoop the nut mixture into a large Pyrex measuring cup or other microwave-safe container and heat until it begins to bubble, about 3 minutes.
  5. Add the hot nut mixture to the boiling broth/agar and stir constantly until smooth and bubbling.
  6. Immediately spoon the mixture into cupcake pan lined with cupcake wrappers (or any other container).
  7. Place in the refrigerator and cool completely (at least 1 hour).

The agar is hard to measure because it is nearly weightless and comes in different forms. Avoid agar containing other ingredients (like sugar). Yo can skip the agar but your end result will be a paste rather than a spread that holds its own shape.

You can add other ingredients like fresh garlic, onion, fresh ground pepper, jerk seasoning. Experiment!

I recommend low sodium vegetable broth but if your like things saltier use the regular stuff.
